      • Observation: Food in upright display cooler in kitchen measured at 9 degree C. Coleslaw, buns, and salad sauces stored in this unit. Operator moved food from the unit to walk in cooler at the time of the inspection. Display cooler must maintain food at or below 4 degree C.

      • Repair the cooler so that can maintain food temperature at or below 4 degree C.
      • Do not store perishables in this cooler until is repaired.

      • Observation (CORRECTED DURING INSPECTION): Raw eggs stored on the shelf on top of produce in the walk-in cooler.
      • Corrective Action(s): **Issue corrected at the time of inspection** Raw eggs were moved to a lower shelf. Reminder to always have vegetable and cooked/ ready-to-eat food on the top shelves and away from raw meat and raw eggs to avoid potential contamination of food.

      • Observation: Mouse droppings noted on the floor below the dishwashing and prep table near that area.
      • Corrective Action(s): As per operator, they did have a pest issue awhile ago and believe that it has been resolved. Please sweep, clean and sanitize any areas noted with droppings. Monitor the areas for reoccuring droppings to determine if the pest issue has actually been resolved.

      • Observation (CORRECTED DURING INSPECTION): Gravy in the hot hold unit was noted with an internal temperature of 53.0C.
      • Corrective Action(s): **Issue corrected at the time of inspection**
      • As per the operator, a new batch of gravy is cooked every morning. The current batch that was tested was made approximately 45 minutes ago. Operator increased the heat and continue to cook the gravy when issue was identified.
      • Please check the final cooking temperature of the gravy and ensure that it reaches at least 74C (cooking temperature) prior to placing in the hot hold unit or turning down the hot hold unit to maintain the temperature above 60C while being hot held.

      • Observation (CORRECTED DURING INSPECTION): Over 200 ppm chorine residual (chlorine test strip bleached out) was detected in the sanitizer spray bottle.

      • Operator diluted the sanitizer spray bottle. 200 ppm chlorine residual was detected in the solution after issue was corrected.

      • Observation (CORRECTED DURING INSPECTION): Facility has a 3-compartment sink. When asked to see their drain plugs, it took some time for them to locate the drain plugs. This demonstrate that they have not been washing their dishware properly in the 3-compartment sink.
      • Corrective Action(s): **Issue corrected at the time of inspection**
      • Reviewed the steps for manual warewashing with the operator.
      • 1. Use the first sink to wash the dishware and utensils with detergent.
      • 2. Rinse in the second sink.
      • 3. Fill the third sink with chlorine solution (2 mL of bleach per 1 litre of water will give 100 - 200 ppm chlorine solution) and soak for 1 - 2 minutes.
      • 4. Allow to air dry.

      • Observation (CORRECTED DURING INSPECTION): Back door was propped open at the start of the inspection. No screen installed on the back door.

      • Install a screen on the back door if you wish to keep it open to avoid pest from entering the premises. Otherwise, keep it close at all time.

      • Observation: 1. Grease buildup noted on the fume hood nearby the microwave unit. As per operator, fume hood is being professionally cleaned on 07/06/2022. As per their sanitation plan, they clean the fume hood every month.
      • 2. Grease buildup noted on the floor below the deep fryer cabinet - unit nearby the microwave.
      • 3. Grease buildup noted behind the cookline - cookline closest to the sink area.
      • Corrective Action(s): 1. Clean the noted grease buildup on the fume hood. May want to consider increasing the cleaning frequency of the fume hood if the current frequency is unable to keep up with the buildup on the fume hood.
      • 2 and 3. Clean the aforementioned areas and maintain in a sanitary condition.

      • Ensure to mix 1/2 tsp of bleach per litre of water for proper concentrations, and label sanitizer spray bottles.

      • Observation (CORRECTED DURING INSPECTION): Front hand sink has one tap only, and water does not get hot enough for proper hand washing.
      • Operator stated this hand sink is rarely used, as food handlers in kitchen use the back hand sink for hand washing.
      • Corrective Action(s): Contact plumber and replace faucet if necessary. All sinks must have hot and cold running water.
      • In the meantime, continue using hand washing sink in back of kitchen for hand washing.
