- Observation (CORRECTED DURING INSPECTION): 1. 0 PPM QUAT detected in the drive-thru sanitizer container. Container was noted overfilled with wiping cloths.

- 1. Manager refilled the sanitizer container. 400 PPM QUAT detected after the container was refilled. Do not overfill sanitizer container with wiping cloths as that will deplete the effective concentration much quicker than storing less cloths.

Internal temperature was measured at 47.4C. Storing such a large volume of gravy in a deep container makes it difficult for the food to cool quickly
- Corrective Action(s): Divide the gravy sauce into smaller portions to facilitate faster cooling. Ensure potentially hazardous foods such as gravy is cooler from 60C to 20C within 2 hrs, and from 20C to 4C within 4 hrs to minimize/prevent growth of potentially harmful organisms.
