      • Observation (CORRECTED DURING INSPECTION): Observation:
      • (1) Tomato slicer on drying rack still had dried food debris attached.
      • (2) Couple of pans on the drying rack (for clean equipment) still had oil residue. Not properly cleaning and sanitizing food equipment after use could result in the harbourage of pathogenic microorganisms. This can be a point of cross-contamination in future uses and could make customers sick.
      • Corrective Actions:
      • (1) Operator placed the tomato slicer in the wash compartment of the 3-compartment sink.
      • (2) The pans were also placed in the 3-compartment sink for manual warewashing. Ensure to follow proper manual warewashing (scrape off food debris, wash with warm soapy water, rinse with water, sanitize and air dry).

      • Observation (CORRECTED DURING INSPECTION): Observation: Hand sink beside gravy prep station was not equipped with paper towels. Having no means for hand drying increases the risk of contamination during food handling. This could look like wiping hands on apron.
      • Corrective Actions: Staff refilled paper towel dispenser. Ensure that the paper towel dispenser is supplied at all times to prevent contamination of foods during handling.

      • Observation (CORRECTED DURING INSPECTION): Observation: Plastic component of tomato slicer had cracks. Using food equipment with cracks could lead to the harbourage of pathogenic microorganisms in its crevices due to the availability of food and moisture collected.
      • Corrective Actions: Operator removed the plastic component with a blade and stored it in a box to later discard. Ensure food equipment used is maintained in a state where it's smooth, non-absorbent and is easy to clean.

      • Observation (CORRECTED DURING INSPECTION): All sanitizer pails on site were measured with Quats concentration less than 50 ppm. Sanitizing compartment at the 3 compartment sink was measured at 0 ppm Quats.
      • Corrective Action(s): Staff refilled the sanitizing compartment and pails with 400 ppm Quats sanitizer. Clean and sanitize all food contact surfaces.

      • Observation: 1. Hand washing station at the front service area did not dispense water with the auto sensor. Staff have to turn on and off the sink from the bottom connection.
      • 2. Paper towels not available for the hand washing station in the staff washroom.
      • Corrective Action(s): 1. Service the sensor to ensure hot and cold running water is available at aforementioned hand washing station.
      • 2. Provide paper towels at the staff washroom hand washing station. Corrected.

      • Observation: Hand washing station located at the front service area was not able to provide hot/cold running water due to sensor issues. Staff were turning on the water directly from the water valve under the sink.
      • Corrective Action(s): Service the aforementioned hand washing station to ensure hot/cold running water can be provide with the sensor on the sink. Correct by: Nov 3, 2023.

      • Observation (CORRECTED DURING INSPECTION): Two buckets of Quats sanitizer at the cook line measured at approximate 100 ppm. 200 ppm - 400 ppm is required to properly sanitize food contact surfaces.
      • Corrective Action(s): Discard the aforementioned buckets of sanitizer and refill with 200 ppm Quats sanitizer. Clean and sanitize all food contact surfaces at the cook line area.
