      • Observation (CORRECTED DURING INSPECTION): 1) Soup were observed being cooled using a fan. Staff were notified and educated on proper cooling methods. Cooling wands on-site but were not used until this issue was brought up.
      • Corrective Action(s): Use proper cooling methods to ensure these items are cooled and processed safely. Failure to do so will result in further enforcement action such as closures and tickets

      • Observation (CORRECTED DURING INSPECTION): Raw shrimp observed stored at room temperature. Staff informed that they rinsed the items and are waiting to cook. Unable to verify how long the item was held for. Shrimp was probed and temperature measured. Staff immediately processed item and placed into cooler

      • Observation (CORRECTED DURING INSPECTION): Several items observed uncovered and the use of fan to attempt at cooling allows dust and debris to fall into items. Staff corrected this violation and protected the items.

      • Observation (CORRECTED DURING INSPECTION): Buckets of frozen soup observed sitting at room temperature. Water due to thawing observed on the floor. Staff were notified and education on proper cooling methods.
      • Corrective Action(s): Items were placed back into the freezer due to lack of cooler space. In order to ensure your items are being thawed in a safe manner you must accomodate for the space needed. Further failure to process and handle food items will result in enforcement actions

      • Observation (CORRECTED DURING INSPECTION): No chlorine sanitizer bucket prepared in the back kitchen area.
      • Corrective Action(s): Prepare chlorine sanitizer buckets in the kitchen to measure between 100-200ppm so that food contact surfaces can be sanitized.

    • 203 - Food not cooled in an acceptable manner [s. 12(a)]
      • Observation (CORRECTED DURING INSPECTION): (1) 6 containers of soup stock measured at 27C in the walk in freezer. Operator indicated it was put into the freezer to cool an hour and a half ago.
      • (2) Large conrtainer of brisket observed cooling on the shelf - probed at 50C. Operator indicated it started cooling an hour ago.
      • Corrective Action(s): (1) Ice wands were used to properly cool down the soup stock to 20C during the inspection. Hot foods must be cooked from 60C-20C within 2 hours or less, then from 20C-4C within 4 hours or less.
      • (2) Brisket was transferred to 2 sheet pans to allow for faster cooling during the inspection. Ensure brisket is cooled to 20C within 2 hours before transferring to the cooler.

      • Observation (CORRECTED DURING INSPECTION): Large container of soaked bean sprouts, baskets of cooked noodles were stored at room temperature.
      • Corrective Action(s): Bean sprouts and cooked noodles moved to the walk in cooler during the inspection. Reminder: Take out smaller portions that can be used up within 2 hours or store in cooler when not in use.

      • Observation (CORRECTED DURING INSPECTION): Test strip bleached out when testing the bleach sanitizer bucket.
      • Corrective Action(s): Staff prepared a new solution during inspection (mix 5ml bleach to 1L water) - measured at 200ppm.

      • Observation: Observed large 8 - 10 L containers of soup in the walk-in cooler. As per staff, soup is boiled and placed in the large containers. After the soup has been cooled slightly at room temperature, they are brought to the walk-in cooler for the final phase of cooling.
      • Corrective Action(s): Discussed with the staff the danger of cooling in large containers as it does not seem possible that food is cooled within the required time frame from:
      • 60.0C to 20.0C in 2 hours then 20.0C to 4.0C in 4 hours.
      • Requested staff to speak to the operator to purchase cooling wands to assist in cooling if large containers are used. If not, purchase smaller containers to portion out the soup to assist with rapid cooling that will adhere to the require cooling time frame.

      • Observation (CORRECTED DURING INSPECTION): High temperature dish machine was registered with 73.8C at the plate level and 100 PPM chlorine residual during the rinse cycle. No detergent was feeding into the dish machine, instead a sanitizer container was noted feeding into the high temperature dish machine.
      • Corrective Action(s): Wash all food contact items going into the dish machine manually with detergent before loading into the dish machine for sanitizing.
      • A high temperature dish machine should not have a sanitizer container being fed into the machine as it already uses heat to sanitize as oppose to chemical. Purchase the proper detergent for the dish machine.

      • Observation (CORRECTED DURING INSPECTION): One of the prep reach-in coolers (unit noted beside the kitchen handwash station) was noted with an ambient air temperature of 11.0C. It was holding food from overnight at over 4.0C.
      • Corrective Action(s): The following cold potentially hazardous food items were noted over 4.0C in this cooler and was discarded by the operator: 7 bags of prepared beef skewer (13.1C), 2 containers of cooked pork (11.6C), an opened bag of marinated pork balls (approximately 8 balls max. noted at 14.6C), 1 container of lettuce and 1 container of garden salad. Picture evidence was collected.

      • Observation: Grease buildup noted in the interior of the deep fryer cabinet. Grease and debris buildup noted on the wire rack holding clean bowls/ plates above the prep reach-in cooler. Debris noted on the underside of the prep cooler door handles.
      • Corrective Action(s): Clean and sanitize the abovementioned areas and maintain in a sanitary condition at all time.

      • Observation: One of the reach-in prep coolers beside the kitchen handwash station was note noted at 11.0C and the server upright cooler was noted at 11.9C.
      • Corrective Action(s): All cold potentially hazardous food items were either discarded by the operator or moved to another functioning coolers (food that were prepared not too long ago and place in the upright cooler). Do not use either of these coolers to store cold potentially hazardous food items until they have been serviced. Both coolers must be able to maintain food at 4C or below to avoid bacteria from proliferating and/ or producing toxin which may result in a foodborne illness to consumers.

      • Observation (CORRECTED DURING INSPECTION): <10 ppm chlorine residual detected in the sanitizer container in the kitchen prep area.
      • Corrective Action(s): **Issue corrected at the time of inspection** Operator remixed the sanitizer solution. 200 ppm chlorine residual detected after the issue was corrected.
      • Change out the sanitizer solution more often if solution is noted overly soiled. Soiled solution will have their sanitizer depleted and will not be effective for getting rid of bacteria on food contact surfaces when used.

      • Observation: 1. Some containers of food was stored uncovered in the walk-in cooler.
      • 2. Raw eggs were noted on the top shelf, stored above chopped onions/ produce.
      • 3. Improper dispensers (bowls), with no handles, were being used and stored within bulk food containers for dispensing food.
      • Corrective Action(s): 1. Wrap or place a lid over all unprotected food in the walk-in cooler. All food not in active use must be stored protected with either a lid or plastic wrap to avoid potential contamination of the stored food.
      • 2. Store the raw eggs on a lower shelf, below the produce. Follow the proper storage hierarchy for food. Store raw eggs and raw meat below or away from ready-to-eat or cooked food.

      • 3. Remove the bowls from the bulk food containers and stop using improper dispensers for these food. Purchase proper dispensers, with handles, and either store the dispenser on top of the container or with the handle extending out from the food.
