      • Observation (CORRECTED DURING INSPECTION): Numerous (3) soiled wiping cloths were noted on the counters at the time of the inspection and were not in use. No chlorine residual noted on cloths. Observed staff replenishing sanitizer buckets upon arrival for inspection.
      • Corrective Action(s): Ensure wiping cloths are being used with sanitizer on food contact surfaces. Follow sanitation plan regarding use of cloths, sanitizer and food contact surfaces. According to Mgr, procedure is to use cloth once and transfer to dirty bucket.
