- Observation (CORRECTED DURING INSPECTION): Large beef roast >12lbs was cooled whole, tightly sealed in plastic wrap and stored in the cooler for cooling, for 16-24hrs. Internal temperature of the roast was between 4.9C-5C.
- Corrective Action(s): Note that whole roasts this size cannot adequately cool if left whole and covered.
- Ensure roasts are cut up after 30min-1hr of cooling and cooled in small portions.
- Roasts, during cooking, should always be monitored with probe thermometer to ensure they are fully cooked.
- This roast should be discarded and not offered for consumption.
