    • 08. Do food handlers ensure that food is protected from contamination (unless noted elsewhere)(Non-Critical)?
      • 1) A Styrofoam cup was being used to scoop Panko breadcrumbs. Please replace the Styrofoam cup with a proper bulk scoop that is equipped with a handle to protect from contamination. 2) The rice paddle was stored inside a bowl of stagnant room temperature water. The rice paddle must be stored inside an ice bath to reduce the risk of bacterial growth and cross-contamination when scooping.
    • 12. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Non-Critical)?
      • Facility makes sushi rice but does not have a way to test the pH of the rice. Please obtain either pH test strips or a pH meter to be able to test and record the pH of the sushi rice. Sushi rice must have a pH of 4.6 or lower to reduce the risk or bacterial growth.
