      • The sanitizing solution exceeded the recommended concentration limit. Ensure that the concentration is within the limits specified for the type of sanitizing chemical being used.

      • 1. Dirty bulk flour and cornstarch storage containers were observed. Clean all dirty bulk food storage containers.2. Bulk food scoops are stored in the food containers. Store scoops in a designated sanitary area.
    • 16. Is the facility free of unapproved animals, vermin and/or insects (unless noted elsewhere), and maintained to prevent the entry or harbourage of pests?
      • 1. Rodent droppings were observed during the inspection. Conduct pest control activities 2. Pest control record was not observed. Establish and maintain pest control record.
    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • Light fixtures without shatter-resistant light covers were observed in the kitchen and storage room. Replace the shatter-resistant light covers or install shatter-resistant light tubes.

      • 1. The doors on the two deep freezers in the facility are defective. Repair the doors or replace the equipment.2. The freezers appear to be dirty. Clean both freezers.

      • Dirt and food buildup were observed on the floor, in corners, and in crevices of the kitchen. Conduct deep cleaning.

Food safety records help to monitor, take corrective steps to ensure that food process is done in a manner that makes the food safe to eat, and a commercial food establishment must have written procedures designed to ensure its safe and sanitary operation and maintenance.
