- 1. Chicken kababs/chicken bites were probed at 48C. Ensure cooked high-risk foods are held at 60C or above at all times. The food was discarded.2. The cooking/holding process of chicken kababs/chicken bites was reviewed with operators. Chicken bites were observed being cooked from frozen (fully cooked product). The internal temperature immediately after coming out of the oven was 48–50C. The temperature was measured using two probe thermometers. The operator was selecting an incorrect oven setting for reheating.Reheat potentially hazardous foods that have been cooked and cooled, and are intended for hot holding, to an internal temperature of 74C.Corrected onsite. The food was discarded. Education was provided. Please ensure that all staff are aware of and use correct oven settings. Use a probe thermometer to check the internal temperature of food.
