      • Corrective Action(s): Reviewed proper 3-compartment sink dishwashing method with staff:
      • 1) Scrape dishes to remove food debris
      • 2) Compartment 1: Wash the dishes with detergent and water
      • 3) Compartment 2: Rinse the dishes with clean water
      • 4) Compartment 3: Sanitize with 100 ppm bleach sanitizer (1 tsp bleach per 1L water). Soak dishes in the sanitizing solution for a minimum of 30 seconds

      • Corrective Action(s): 1. Raw chicken was moved to the bottom shelf in the walk-in cooler. Ensure that raw foods are stored below ready to eat foods.

      • Observation (CORRECTED DURING INSPECTION): High temperature dishwasher had a final rinse temperature of 67.9C after multiple runs. Operator contacted technician and ran the dishwasher on a longer cycle setting. Final rinse temperature tested again and registered at 75.5C (minimum 71C).
