     • Observation: Refrigeration Temperature for Cold zone fridge containing pre-made sandwich was observed to be (9.8°C) which is above the regulatory requirement of 4°C or lower. (Public Health Significance) Refrigeration temperatures for perishable foods must be less than 4°C to prevent the growth of disease causing bacteria and toxin production which may lead a possible foodborne illness.
     • Corrective Action: Pre-made sandwiches was moved to a working refrigeration units immediately and operator was advised to have the unit serviced to ensure that the fridge provides temperature of 4°C or lower at all times. Monitor and log temperatures regularly.
