- Observation: 1) Observed staff washing dishes. Dishes were not being sanitized prior to air-drying. A drying rack was stored in one of the sink compartments.
- 2) Sanitizer spray bottle that's labeld "food prep" has another chemical in it, not a sanitizer.
- Corrective Action(s): 1) Proper dishwashing procedures must be followed. Dishes must be washed in one compartment, rinsed in the 2nd and sanitized in the 3rd prior to air drying. You can air dry dishes on the drainboard.
- 2) You must use an appropriate foodgrade sanitizer for food contact surfaces e.g. 100-200ppm bleach or 200ppm Quats.

- Observation: Operator is not reading the thermometer accurately. Temperature for some of the coolers is being recorded in the hundredths place i.e. 0.43, 0.41, etc when the thermometer inside the cooler doesn't have this accuracy displayed!
- Corrective Action(s): Learn how to read the thermometers accurately and record the temperatures properly.

- Observation: Over counter cooler is at 9 degC. Operator is not overcrowding the cooler, but it's still not able to maintain temperature. Move PHF's into another cooler. Don't store any phf's in this cooler. This is a repeat offense.

- Observation: The 3-compartment sink was cluttered with dishes and a cardboard box full of items the operator planned on returning. In-use utensils are not being washed/replaced every 4 hours.
- Corrective Action(s): The sink must be available for dishwashing at all times. You cannot use it as a storage space. All in-use utensils must be washed/replaced every 4 hrs.

- Observation: The hand sink was being used to dry clean dishes.
- Corrective Action(s): You cannot block access to the hand sink at any time. Remove the dish rack with dishes from the sink.

- 2) Temperature logs are not being maintained.
- Corrective Action(s): 1) You cannot make foods that require grease for frying. Your permit is restricted to: no grease laden vapors. Contact the City to determine if you require exhaust ventilation for your omelette prep. Submit a FSP for the pani puris.

- Observation: Countertop cooler is at 9 degC. This is a repeat infraction. Cooler was stuffed with food items.
- Corrective Action(s): This is a domestic cooler. The cooler cannot maintain a temperature below 4 degC if the vents and fan are always blocked. Repair the cooler if the temperature doesn't drop below 4 degC within the next hour. Do not store any PHF's in this cooler in the mean time. You need to get a commercial cooler for food storage as discussed.
