- Observation: 1) Foods noted in pails and plastic bags in a igloo type cooler inside the restaurant. Temperature of the foods were around 30-40 degC.
- 2) Vegetables in solution inside the prep cooler were at 13 degC. Pans were double stacked under the cover.
