- Observation (CORRECTED DURING INSPECTION): Ranch dressing was packaged in small take-out dresssing containers and stored in front cooler. The internal temperature of ranch recorded at 11C. Operator showed the bucket which was stored in the cooler and it has label stating 'keep refrigerated'. One of the ingredients noted is egg yolk. Operator discarded 28 containers of ranch dressings at the time of inspection.

- Observation (CORRECTED DURING INSPECTION):
- 1) Bleach sanitizer spray measured at above 200 ppm of bleach, chlorine test strips bleached out.
- 2) No additional sanitizer solution on site, operator said they ran out of bleach.
- Corrective Action(s): Ensure an approved food contact sanitizer is available for use during operations. Chlorine bleach sanitizer solution should have a concentration between 100 - 200 ppm. Ensure chlorine test strips are available to check the concentration of solution.
- Operator went to purchase unscented bleach during inspection and a new chlorine bleach solution was made, concentration at 200 ppm.

- Operator covered the vegetables using aluminum foil.
- 2) Food must be stored 6 in/15 cm off the ground and in a location that prevent contamination from occuring
- Operator moved the onions off the ground onto a shelf in the preparation area.
