- Observation: 1. Build up of food debris and grease noticed behind the syrup storage shelves, underneath dry storage shelving and underneath/behind upright freezer and in other hard to reach areas.
- 2. Shelves in the walk-in cooler has rust build up and some have mould/debris accumulation.
- Corrective Action(s): 1. Clean floors thoroughly especially underneath equipment and shelving to remove any food debris. Ensure to not push debris underneath the shelves while brooming floors (By: Dec. 13, 2018)
- 2. Recommended replacing the shelves with easily cleanale shelving. Alternatley, clean all shelves thoroughly to remove mould and rust ( By Dec. 20, 2018)

- Corrective Action(s): Ensure that all spray bottles of any chemicals, cleaners, sanitizer and even water are clearly labelled. Ensure to double check the bottle label before re-filling it from the chemical dispensers. ( Immediately)

- Observation: Dishwasher final rinse temperature registered 67.8 C, 69 C and 66 C after three runs. Final rinse temperature is inadequte for sanitizing of glasses and dishes.
- Corrective Action(s): Repair or replace the dishwasher so that it is capable of reaching at least 71 C at the dish surface during final sanitizing rinse.
- The booster must heat the water to a minimum of 82 C at the manifold. Untill then all glasses and basket must be sanitized manually by soaking in 200 ppm quats sanitizer. (immediately)

- Observation: Temperature of hot water was inconsistent when checked at the hand sink and triple wash sink. Hot water tested 35C and then cooled down to 24 degrees C within a few seconds.
- Corrective Action(s): Repair or adjust the on-demand hot water system so that constant supply of hot water is available at a minimum of 45 degrees C at all sinks. This includes all hand sinks and wash sinks (Immediately).

- Corrective Action(s): Ensure to keep all items (e.g. bags of salt etc.) at least 6 inches off the floor to allow for easy cleaning. Clean floor underneath the shelves. Ensure to wipe off any spilled water. Check the mop sink for leaks. (April 26, 2018).
