      • Observation (CORRECTED DURING INSPECTION): Staff lunches (including left-overs of employee meals) were found stored on top shelves in the double door cooler.
      • Corrective Action(s): Food and beverages belonging to staff must be kept in a separate staff fridge to prevent contamination of food items to be used for hotel guests. ( Immediately).

      • Corrective Action(s): Some of the perishable food items were relocated to another cooler at 4 C. Do not over stock any cooler and ensure to not store any wide pans or boxes that could block the flow of cold air.
      • Service or repair the sliding door cooler and small bar cooler in dining area to ensure they are able to maintain foods at 4 C or below at all times. ( Dec. 7, 2018).

      • Observation: Dishwasher final rinse temperature registered 58 C during final rinse after 3 runs.
      • Corrective Action(s): Repair or replce the dishwasher so that it reaches 120-140 F (50-60 C) during wash cycle and between 180-190 F (>82 C) during sanitizing cycle.Ensure the soap is thoroughly rinsed from the plates after rinse cycle. (Immediately). Send a copy of the work order to our office.

      • Corrective Action(s): Repair or adjsut the juice dispenser cooler so that it is capable of maintainiing juices at 4 C or colder. Place a thermometer in the unit to monitor and record temperatures daily. (Immediately)
