- A new leak has caused cracking and missing drywall in the ceiling. Action shall be taken to fix the cause of the leak and repair the ceiling. The ceiling in the kitchen is required to be smooth, durable, easy to clean and be in good repair.Jan 22/26 update - The main area which is damaged has been patched. Ensure all cracks are filled and the area painted.

- Sanitizer was not present in the main cooking area. Sanitizer shall be present in the area to clean surfaces as raw meat is handled.

- Wiping clothes were not stored in a sanitizer solution. Clothes were being used multiple times to wipe the counter without being sanitized. This method of wiping the counter can cross contaminate the working surface. All clothes shall be stored in a sanitizer solution.

- Meat sauce is cooling in a large pail in the walk-in cooler. The top of the meat sauce is 13C, while 4-inches down is measured at 30C. Staff have not been stirring the meat sauce to promote rapid cooling. It is recommended a shorter and wider pan is used to cool the meat sauce, or staff stir the food to promote rapid cooling. The centre of the pail will remain warm for long enough to allow pathogens to grow and to produce toxins with out stirring.

Ceilings are required to be smooth, durable and easy to clean.May 5 update- Actions have been taken to start the repairs. The area has been primed/prepped for further repair.

- 1. Meat slicer had food debris under the grinding stone cover and blade cover. Operator understands the importance of ensuring equipment is clean to prevent bacterial growth and contamination. This was corrected during inspection. 2. Breakfast preparation cooler cover had build-up of food debris behind the handle. Common touch items shall be clean throughout the day to prevent cross-contamination and prevent food build-up. Cover was detached, sanitized, cleaned and replaced.
