      • Additional traps setup throughout premise. Dead rat caught on trap at top of stairs for 3rd floor storage area. Droppings still noted in the 2nd floor storage area.
      • Corrective Action(s): Set additional traps for monitoring. Seal any holes and potential entry points. Correct immediately.

      • Observation:
      • - At the time of inspection 0ppm chlorine detected at the plate level during the final rinse cycle for the low temperature dishwasher.
      • - Due to clog for drainage pipe, glass washer not available for use.
      • - No approved food contact surface sanitizer solution prepared and available for use.
      • Corrective Action(s):
      • - Low temperature dishwasher serviced by service technician. 50ppm chlorine detected during the final rinse cycle.
      • - Bar glass washer also serviced but as per service technician requires replacement parts.
      • - Staff refilled a bottle of 200ppm quats from the chemical dispensing station.

      • Observation (CORRECTED DURING INSPECTION):
      • - At the time of inspection plumbers working on clogged drainage pipe which services the kitchen hand sink, front area 2 compartment sink and glass washer. No adequate hand washing stations available in the kitchen and front service area.
      • - Staff washroom hand sink paper towel dispenser empty.
      • Corrective Action(s): Clog in drainage pipe cleared. Kitchen hand sink available for use. Ensure during operation all hand sinks are provided with hot/cold runnning water, clear of obstructions, in good working order, and provided with liquid soap and paper towels.

      • Corrective Action(s): Contact your pest control company to address the fly and rat issue. Thoroughly clean and sanitize the storage area. Remove any unnecessary items. Seal any holes and potential access points. Clean all food spills quickly and eliminte any standing water. Setup traps for monitoring. Correct immediately.

      • Observation: Storage room next to walk in cooler requires a thorough cleaning.
      • Corrective Action(s): Reorganize and thoroughly clean the storage room. Correct by October 30, 2025.

      • Observation:
      • - At the time of inspection 0ppm chlorine detected at the plate level during the final rinse cycle.
      • - Due to clog for drainage pipe, glass washer not available for use.
      • Corrective Action(s):
      • - Dishwasher service technician onsite. Serviced and 50ppm chlorine detected during the final rinse cycle. Recommend obtaining test strips to verify chlorine concentration.
      • - Plumbers serviced the clogged drain pipe. Service technician serviced the glass washer but replacement parts required. Do not used until fixed. Until then in the interim, all glasseware to be washed in the low temperature dishwasher.

      • - At the time of inspection dishwasher final rinse chlorine concentration 0ppm.
      • - Sanitizer container 0ppm chlorine/quats.
      • Corrective Action(s):
      • - Staff replaced the bulk sanitizer solution container and primed the sanitizer line. 50ppm chlorine detected during tha final rinse cycle. Obtain chlorine test strips and verify chlorine concentration on a daily basis.
      • - Ensure during operation an approved food contact surface sanitizer solution is prepared and available for use. Note: select the correct chemical agent from the dispensing unit.
