- Observation: There are various cakes from "Portofino Bakery" that were left at room temperature. There were no directions on the food items indicating that they need to be refrigerated, but the ingredients for the "Lemon Coconut Cream Cake" include milk and whole eggs. The ingredients for Pina Colada Cake includes milk, cream cheese. The ingredience for carrot cake includes cream cheese.
- Corrective Action(s): The following cakes were put on hold:Lemon Coconut Cream cake, Pina Colada Cake, and Carrot Cake. Remove these cakes from sale and do not sell/discard/open them. The manufacturer will need to verify that cakes are shelf stable, either from their district health inspector, or from a lab report indicating that these food products have Aw (water activity) <0.85 or pH <4.6.

- Observation (CORRECTED DURING INSPECTION): 1)Freshly sliced/wrapped watermelon stored/displayed on ice were at 11 deg C. The ice was only touching the bottom of the watermelon.
- 2) Various pre-packaged sauces (including salsas, hummus, salad dressings) were at 9-10 deg C in display cooler.
- Corrective Action(s): 1) Move watermelon to a refrigerated display case and keep at 4 deg C or less.
- 2) If you want to keep cut watermeon on ice, it must be fully submersed in the ice.
- 3) Operator indicated that this cooler was just stocked with these sauces. All sauces moved to a different refrigerated display case at <4 deg C.

- Observation (CORRECTED DURING INSPECTION): Watermelon was being sliced into quarters at time of inspection at the store 2 compartment sink area, wrapped, and placed on ice for sale in the front area of the store.
- Corrective Action(s): Stop cutting watermelon here immediately. Your food store does not have permission to process ANY foods. Your two compartment sink in the back area of the store is only for rinsing produce and washing/rinsing/sanitizing any scoops for bulk items. There is soil/dirt in this area that could contaminate the watermelon.
- You may cut and wrap the watermelon in your deli area ONLY (the deli is a permitted kitchen).
