- Savory food items were being stored at room temperature for four hours. Discussed with operator that until TPHC approval is given, that foods are not to be stored longer than 2 hours at room temperature prior to being discarded. Operator asked if the foods could be stored in refrigeration, and not have to be discarded. PHI stated that foods could be stored in refrigerator and be kept for a longer period.
