- 1. There was a protective manufacturers sticker still present on the stainless steel of the back door. Remove to allow for a smooth surface that is easy to clean. 2. The back storage area is unorganized and cluttered. Organize area so that it is easy to clean.3. There was an accumulation of dust on the fan cover of the walk-in cooler.

- 1. The large square cutting boards are stained and deeply rutted. Replace or repair cutting boards so that they are smooth, non-porous and easy to clean. 2. There is an accumulation of dust on the fan cover of the ice machine. Clean area noted.

- 10. Are food temperatures during storage and processing being controlled to maximize food safety?
- The following were noted:1. The temperature of bacon bits stored in one of the inserts at the prep cooler was measured at 10C. Operator was told to cover the lid during their downtime. The temperature was re-taken and measured 3C.2. The internal temperature of shrimps' salad stored in the display cooler close to the till was measured at 8C. Operator provided temperature log of the salad and relocated the container a bit further into the cooler. Probe thermometer was put in the fridge and measured at 3C or below.
