      • 2. Gravy in hot holding had an internal temperature of 49C. Operator stated that gravy was prepared less than 2 hours ago.
      • Corrective Action(s): Operator was instructed to reheat the black beans and gravy to 74C immediately. Ensure that hot holding units are able to maintain foods at 60C or above at all times. Monitor hot holding temperatures.

      • Observation (CORRECTED DURING INSPECTION): Black beans in rice cooker had an internal temperature of 47C. Staff stated that the beans were prepared less than 2 hours ago.
      • Corrective Action(s): 1. Staff was instructed to reheat the black beans to 74C immediately.
      • 2. Ensure that hot holding units are able to maintain foods at 60C or above at all times. Monitor hot holding temperature. If current hot holding unit is not capable of maintaining 60C, obtain a new hot holding unit that can keep foods at 60C or higher at all times.

      • Corrective Action(s): 1. All equipment that was washed today must be washed and sanitized again. Ensure that the proper three compartment sink warewashing method is followed: wash, rinse, sanitize (100 ppm chlorine), and air dried. Information sheet was provided to staff.
