      • Observation (CORRECTED DURING INSPECTION): All food items from the prep cooler (beside the rice cooker) were stored at 9C
      • Corrective Action(s): All food items were stored in the walk-in cooker overnight before placing in the prep cooler, and they did not exceed 2 hours limit (open time: 10AM, inspection time: 11AM), operator moved all the food items into another prep cooler. Please DO NOT use the prep cooler until it was repaired.

      • Observation (CORRECTED DURING INSPECTION): A covered container of chicken stored in the bottom portion of the left 'New Air' prep cooler probed at 45C. Supervisor reported the chicken was placed in the cooler 30 minutes ago.
      • Corrective Action(s): Chicken was removed from the cooler to properly cool to 20C during the inspection. Proper cooling procedures were reviewed with the supervisor. Ensure hot foods are cooled from 60C-20C in 2 hours or less, and then from 20C-4C in 4 hours or less to prevent pathogen growth.

      • Observation: The ambient temperature of the TRUE prep cooler (lower refrigerated storage space) located adjacent to the oven is 9C. The temperature of proteins placed inside inserts located on top of the display cooler in the row furthest away from the cutting board are: falafel is 2.7C, tuna is 3.9C. Shredded cheddar and corn/beans located on top of prep cooler closest to cutting board is 5.2C and 7.1 C, respectively
      • Corrective Action(s): Ensure there are NO potentially hazardous foods (e.g. proteins, dressings) stored in TRUE prep cooler. Adjust the temperature settings of the prep cooler to ensure it is at 4C or under at all times. The operator moved the proteins and beans/corn to another prep cooler that is 4C or below

      • Observation (CORRECTED DURING INSPECTION): The concentration of QUATS sanitizer inside the spray bottle at the salad prepping station is 50 ppm
      • Corrective Action(s): Ensure the concentration of QUATS inside the spray bottle is 200 ppm at all times. Use test strips to verify the sanitizer concentration. Operator replaced the sanitizer with fresh QUATS sanitizer from the dispenser at the time of inspection

      • Observation (CORRECTED DURING INSPECTION): Handwash station next to the dishwasher was missing paper towels and liquid soap. A trolley was obstructing access to the same handwash station. Frequent handwashing practices is important as it removes grease, debris, and bacteria on hands
      • Corrective Action(s): Ensure all handwashing stations are accessible and adequately stocked with paper towels, liquid soap at all times. The operator removed the trolley away from the handwash station and placed paper towels and liquid soap by the handwash station.

      • Corrective Action(s): Ensure this cooler is fixed so that its temperature is 4C or below at all times. Remove the block of ice to ensure that there is adequate air flow throughout the top of the prep cooler
