    • 205 - Cold potentially hazardous food stored/displayed above 4 °C. [s. 14(2)]
      • Observation (CORRECTED DURING INSPECTION): Ambient temperature of walk-in cooler was measured to be between 7-8C. Temperature logs indicated that the cooler was 4.5C in the morning.
      • Corrective Action(s): All perishable food items were transferred to working undercounter cooler. Do not store any potentially hazardous food in walk-in cooler until it has been adjusted/repaired to maintain foods at 4C or below at all times.

      • 206 - Hot potentially hazardous food stored/displayed below 60 °C. [s. 14(2)]
      • Observation (CORRECTED DURING INSPECTION): The internal temperature of rice in rice cooker was 45C.
      • Corrective Action(s): Rice was discarded during the inspection. Do not use this rice cooker if it is not capable of maintaining foods at 60C or above. Operator stated that new rice cooker has been purchased. Ensure that rice is maintained at 60C or above at all times

      • Observation (CORRECTED DURING INSPECTION): 1. QUATS sanitizer at the dispenser measured over 400 ppm.
      • 2. QUATS sanitizer in containers holding wiping cloths at front prep area measured 100 ppm.
      • Corrective Action(s): 1. Re-calibrate QUATS sanitizer dispenser to 200-400 ppm QUATS. Manually dilute QUATS sanitizer until dispenser has been re-calibrated to dispense 200-400 ppm QUATS.
      • 2. Purchase QUATS test strips. EHO provided operator with a few QUATS test strips.

      • Observation: Ambient temperature of walk-in cooler was 7-8C.
      • Corrective Action(s): Adjust and or repair cooler to maintain temperatures of 4C or below at all times. Do not use walk-in cooler until it is capable of maintaining temperatures of 4C or below. Contact EHO for re-inspection
