      • Observation (CORRECTED DURING INSPECTION): The internal temperature of a container of meatballs in the hot holding unit was 43.2C. The operator stated that meatballs are reheated in the microwave prior to being placed in the hot holding unit. The operator stated that these meatballs were placed in the hot holding unit less than 30 minutes ago.
      • Corrective Action(s): The operator immediately reheated the meatballs in the microwave to 81.8C. Ensure that food is reheated to 74C prior to being placed in the hot holding unit. Ensure that the hot holding unit maintains food temperatures at 60C or above during hot holding.

      • Observation (CORRECTED DURING INSPECTION): This is a repeated violation
      • 1. Meat balls and caramelized onion in the hot holding unit were probed around 40C, operator stated both items were reheated in the microwave around 10AM, time of inspection: 10:15AM
      • 2. ready-to-eat meat was observed left overnight in the bottom right hot holding unit
      • Corrective Action(s): 1. Operator reheated both items in the microwave. Please ensure all hot held foods are reheated to at least 74C or hotter before placing in the hot holding unit, additionally, please stir the food item during the reheating process to ensure a even reheating temperature
      • 2. Operator discarded the item

      • 2) Chili in bottom hot holding unit probed ~40C. Hot holding unit measured at 41C. Chili was prepared 1 hour ago.
      • Corrective Action(s): 1) Meatballs were reheated to 74C/165F during the inspection.
      • 2) Hot holding unit was turned up and measured at 60C/140F. Chili was reheated to 74C/165F during the inspection.
      • *Ensure holding units are preheated to 60C/140F BEFORE placing hot potenitally hazardous foods inside.
