- 1) Buns with filling noted at 30-35C on the counter. Staff said they were made at opening, around noon. The time is now 1500.
- 2) Several foods noted on the counter, with frozen water bottles. Foods measured from 6-8C:

- Observation (CORRECTED DURING INSPECTION): Vegetable broth was at 57 degC over the stove (stove had been turned off). Vegetable broth must be maintained hot above 60 degC or below 4 degC once cooked. Operator is cooking the broth then turning off the stove and letting the soup cool until closing (over 8 hours). She takes broth from the larger stock pot when an order comes in and reheats it again in a smaller pot before serving.
- Corrective Action(s): This practice is unacceptable. Broth must be kept hot (over 60 degC) or cold (below 4 degC) at all times.
