      • ** Green shelving units near dishwashing area were covered in a thick layer of grease/grime. Please ensure these areas are thoroughly cleaned and sanitized.** The green shelving units in the walk in cooler are covered in mold and food debris. Please ensure these are cleaned and sanitized.

      • ** There was a cutting board in use that was very worn, discoloured and pitted. This can no longer be appropriately cleaned and sanitized. Please resurface or replace cutting board.

      • ** The counter-top can opener was dirty and greasy. Please ensure this equipment is cleaned and sanitized thoroughly, including removing the metal handle to clean the inside of the square bracket.

Areas of note: Top of the dishwasher, sides of counters and surfaces, handsinks, top of the pizza oven, pizza oven drawer, walls underneath countertops, wall above pizza prep counter, light switches, food order computer screen and keyboard, wall behind dishwasher and dishwashing sinks, outside of and roof of the microwave, door of and walls inside of walk-in cooler, ice scoop, outside and top of ice machine, door to air filter under pizza prep counter, sides of prep cooler doors, inside circle of the orange salad spinner, and the door and door frame leading to bathroom hallway.** Drawer of the pizza oven had used greasy cardboard and food debris in it. Please remove cardboard and clean area. ** The outside and top of the ice machine were dirty. Please clean area.** The tinfoil underneath the grills were covered in layers of food and ashes. Please remove tinfoil and crumbs and replace if desired.

      • ** A large area of the inside of the ice machine had a green-brown mold-like substance on it that was making contact with the ice. The operator was advised to dispose of all the ice and stop using the machine until it could be thoroughly cleaned and sanitized. The operator stopped using the ice immediately when instructed.

      • An ice scoop was observed to be stored on a shelf which makes it prone to contamination. Ensure that the ice scoop is kept in a clean container to help prevent contamination. The operator provided a clean container for the ice scoop during the inspection.
    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • No thermometers are observed in several coolers in the main food prep area. Ensure that all coolers are equipped with thermometers.

      • 1. The prep cooler gaskets are observed with a buildup of food debris. 2. A buildup of grime is observed on the inside of the ice machine. 1-2. Ensure that the indicated equipment is cleaned and sanitized.
