     • Scoops were found in the bulk food containers and stored inside the food.- Staff removed scoops from food immediately.- When storing utensils in ingredients, ensure to use scoops with handles and store handle side up to protect food from contamination.
   • 10. La température des aliments pendant l'entreposage et la transformation est-elle contrôlée pour maximiser la salubrité des aliments?
     • Three bulk containers of partially cooked chicken, pork and beef were respectively stored at room temperature. Probe temperature was measured at 9.9C.- Operator was informed to portion the food items and store the remaining food in the walk-in cooler to be used later.- Ensure to store all high-risk food items are kept out of the danger zone of at or below 4°C or at or above 60°C
   • 23. L ' établissement est-il entretenu dans un état propre et sanitaire?
     • Residual grease and debris were observed besides the cooking equipment (fryer), and on floor below the cooking line, indicating inadequate cleaning.- Thoroughly clean the above mentioned areas.
