    • 206 - Hot potentially hazardous food stored/displayed below 60 °C. [s. 14(2)]
      • Observation (CORRECTED DURING INSPECTION): Cold buffet case measured at 15 to 18 C. Unit is designed for ice/water mixture underneath to keep product below 4 C. No ice was in use. When in use the ice bath must be in direct contact with the food inserts.
      • Corrective Action(s): All food on display was discarded and repalced. Ice baths were added to unit.
      • *Make sure staff are trained to prep unit with ice (lots) at beginning of each rush and monitored throughout the buffet cycle. Add ice if needed. Management of ice between bar use and buffet use may be needed. Priority must be to keep food products cold.
      • Violation Score: 15
      • 302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
      • Observation (CORRECTED DURING INSPECTION): Sanitizer spray bottles throughout the facility filled with water only. No bleach on-site. Spray bottles not labelled either.
      • Corrective Action(s): Make sure bottles are properly labelled to use and contents as discussed. Make sure to always have bleach on-site for surface sanitizing use and manual dishwashing procedures for larger pots and pans and in case dsihwasher goes down at any time.
