      • Observation: Prep Cooler at 7 to 8 C. Reviewed temp logs and is consistently above 4 C. This poses risk to food.
      • Corrective Action(s): Remove all Potentially Hazardous foods from below cavity of prep cooler. Limit volumes of food in inserts (mostly sauces) for two hours window of use. discard and replace with fresh insert at two hour max interval for PHF's.
      • Have unit serviced as discussed. Follow up inspection next week for unit.

      • Corrective Action(s): Continue to clean up food at end of day. Look for mouse dropping accumulation locations, clean up and note to Pest Control for action. Continue to implement Integrated Pest Management (IPM) practices.
