- Observation: A) Minor build up of food debris noted along the door slides to the display cooler.
- B) Buckets on the floor of walk-in cooler obstructing floor cleaning. Areas of the floor observed with minor build up of meat juices. Potential cross contamination.
- C) Floor below rational oven observed with a puddle and several spots of grease build up. Floor is really beginning to buckle in this area.
- Corrective Action(s): Clean up spaces as noted in A, B and C.
- * Additionally - for B get buckets off the floor to allow easier cleaning. For C Get a plan together to better direct waste water from rational oven into drain. You may need to cut out flooring and insert a drip pan that can receive and contain the overflow while allowing this waste to flow properly into drain.

- Observation: Counter surfaces and contact points observed with food residues, some of which could be raw proteins. Most food handling is raw, but there is a mixture of ready to eat foods. Limited use of sanitizing cloths. Staff tend to clean surfaces throughout day with an end of day sanitizing step. THis may contribute to cross contamination risks.
- Corrective Action(s): This store should move to the use of sani-buckets for harsd surace sanitizing, using quats pre-mixed sanitizer. Bucket should be labelled and changed every two hours. CHeck for adoption of this method on next inspection.

- Observation: Staff doing too many job duties at once, causing the spread of raw meat juices throughout premises. Observed multiple boxes of meats in food service area pertially dealt with, but not completely. Work surfaces contaminated.
- Dishwashing process started in the middle of this job.
- Dirty tongs left hanging outside cooler and could be used to touch multiple foods.
- Corrective Action(s): Make sure job duties are defined and completed one at a time. Make sure hands are washed when moving between jobs. Make sure tongs remain inside cooler and for single groups of food to control cross contamination as discussed.

- Corrective Action(s): Make sure hard to reach areas of premises are cleaned on regular basis and any mouse access points are found and blocked.

- Corrective Action(s): Premises must be kept cleaner and staff must be trained on how to clean, but also prevent contamination in premises.

- Observation (CORRECTED DURING INSPECTION): Sanitizer spray bottle measured 0 ppm. Tested at mop sink and similart from auto dispenser. Looks like concentrate is not feeding into system. Tried to prime system with operator without success.
- Main sink auto feed working better.
- Feed tube not long enough at mop sink for sanitizer so water splashing onto floor. Feed tube at main sink is dirty, sludgy and mouldy.
- Corrective Action(s): Stop using mop sink sanitizer and use only the main sink set up until mop sink can be fixed. Fix mop sink system as discussed.
- Recommend increasing the length of the mop sink sanitizer feed line and cleaning the same line at dish sinks.

- Observation: Observed rodent droppings on floor in following areas:
- - Under dish sinks at plumbing conduits and clean outs;
- - in washroom;
- - at back door.
- No significant activity noted in other areas of premises.
- Noted traps set and sticky boards placed in several areas and discussed with supervisor and seems to be a recent issue. Pest Control contract in place and visits are weekly.
- Corrective Action(s): Make sure to perform thorough cleaning on all shelves, floor and sotrage areas on daily basis to control food access to rodents. Begin to block all access points, starting with plumbing networks as noted above. Steel wool or copper wool with expandable foam should keep rodents out of premises.
- Continue to trap and eliminate rodent population such that there is no notable build up of droppings. This will help target entry and movement patterns.
- Supervisor noted a trim piece for base of door has been purchased.

- Observation: - Combi oven is discharging sludge-like substance from cleaning cycle onto floor around drain. Floor in and around this area damaged. Also acts as a possible food source for rodents. This problem must be corrected.
- - Make sure all food debris is adequaely cleaned on daily basis. No rodent activity should be noted on any shelves.
- Corrective Action(s): If the cleaning cycle discharge from this unit cannot be contained to the drain, a secondary and removable drip pan must acquired to ensure the waste water is properly contained. Cleaning procedures must be adjusted to ensure this area is cleaned daily and/or immediately after cleaning cycle of unit.
