      • Observation:
      • 1) Holes in ceiling, in the dry storage room, have been covered with cardboard. This material is not durable, cleanable or sealed to keep pests out. This was mentioned in the previous inspection and is a repeated violation.
      • 2) Cover plate on the wall, below the 3-comp sink in the kitchen, has fallen off and this will allow pests into the kitchen.
      • Corrective Action(s):
      • 1) Repair the holes in the ceiling with proper materials that are durable, smooth, level, sealed, and cleanable.

      • Observation:
      • Accumulation of dust was found on the upper wall around the air vent; on the exterior surface of exhaust vents; and on the ceiling. The dust can fall onto food and clean dishes.
      • Corrective Action(s):
      • Clean the dust off the mentioned areas, and make a schedule to have the mentioned areas regularily cleaned to prevent the accumulation of dust.

      • Observation (CORRECTED DURING INSPECTION):
      • Aluminum foil is covering surfaces of the gas range elements and drip tray. The foil is changed once a week with new foil, this is not acceptable. Foil is only made to be used once and then discard as it isn't cleanable. Leaving the foil on for 1 week will allow accumulation of food and this will attract pests.
      • Corrective Action(s):
      • Aluminum foil must be discarded every night and a new foil installed in the morning. If this is not to be done, then do not use foil to cover surfaces.

      • Observation:
      • 1) Accumulation of food debris and crumbs on the floor, along the base of walls and around legs/wheels of equipment, tables, & racks. This will attract pests.
      • 2) Dust and cobwebs accumulated on the upper walls and ceiling of the dry storage room. The dust could fall into food and contaminate it.
      • Corrective Action(s):
      • 1) Sweep and mop the mentioned areas to remove the food debris and crumbs. Detailed cleaning of the mentioned areas is needed on a regular basis. Train staff to move items away from walls, OR the broom and mops reach all the way to the back walls when cleaning.

      • 2) Clean the upper walls and ceiling to remove the dust and cobwebs. Cleaning of these areas shall be done on a regular basis to prevent accumulation.

      • Observation: General sanitation level is good, but food debris is accumulating around the wheels and legs of equipment, racks, & tables; and along the base of walls behind equipment, racks, & tables. The food debris will attract pests.
      • Corrective Action(s): During detailed cleaning, all equipment (racks, tables, equipment, etc) on wheels shall be moved away from walls so staff can sweep and mop the floor behind and beneath these items. For items that can't be moved, staff must reach the broom and mop all the way to the back of walls to remove food debris.

      • 308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
      • Observation: 1) The doors of the oven, below the gas range, do not tightly close and staff are using tape to keep them closed. This is unsafe and may affect the cooking process of food. Staff indicated that they submitted a report and parts are on order.
      • 2) The chest freezer (Frigidaire freezer) in the dry storage room has built up ice on the interior walls and on along the lid seal. This is preventing the lid from closing tightly, and cold air is constantly leaking out. This is causing the freezer to constantly run and use energy to keep the food frozen.
      • Corrective Action(s): 1) Repair the oven doors so they close tightly and operate as per the manufacturer's specifications.
      • **Correction date: Nov. 15/22**
      • 2) Immediately chip away the built up ice on the interior walls and along the lid seal, so the freezer lid can close tightly.
