      • Light accumulation of dust / debris noted inside ice machine.
      • Clean and sanitize regularly to prevent contamination of ice and further accumulation. Comments Routine inspection conducted today. All hand washing stations equipment with hot and cold water, soap and paper towel. All coolers =4°C; all freezers =-18°C. Temperatures monitored and logged daily. Records available. Dishwasher in the back measures sanitary temperature of 71°C at plate level. Dish washer in the front measures chlorine concentration of 100 ppm. Test strips present. Surface sanitizers all measured to be 200 ppm quats. Ensure all sanitizer bottles are labelled. Dipper well is operational. Food storage practices observed to be correct. No pest activity observed. NOTE: Obtain quick test strips. NOTE: Back door observed to be open. Ensure door is closes or install screen to prevent pest activity.
