- Back-door still had a gap on the bottom right corner. Light was shining through. Additionally, another gap was forming on left of the frame. These gaps could allow for possible entry of pests and rodents.
- Repair the door back to a condition where light can't shine through. Deadline: July 31, 2026 (Friday). Comments Follow-up inspection conducted. Action items. - Seal the gaps forming at the back door (left of the frame, bottom right corner). Send photo evidence of the repaired door gaps via email. - Swap the light bulbs in the kitchen prep area to white 540 lux lighting. Comments: - Ice machine sanitation schedule is cleaned biweekly. The interior was maintained in sanitary condition with less chalk-like residue. - Additional spot lights were added to the kitchen, illuminating the space more clearly. * Aim to change to 540 lux white lighting. - Front-end bar cooler is not longer leaking water from its interior. Staff mentioned that it's also cleaned and defrosted biweekly.

- Take the following actions: 1. Empty the ice machine. 2. Clean and sanitize the interior of the machine. 3. Adjust sanitation schedule to reflect its cleaning. 4. Contact area EHO to schedule a follow-up of the above corrective actions.

- The lighting in the kitchen utilizes warm-lighting bulbs. Fine areas were shown to have dim lighting - which could impede effective sanitation efforts (i.e., missed areas).
- Replace the lighting for the kitchen to satisfy 540 lux lighting for food preparation areas. Ensure that all bulbs are functional and spare parts are available. Contact area EHO to schedule a follow-up inspection.

- Defrost the cooler and ensure there's no pooling of water. Contact area EHO for follow-up inspection. Comments Routine inspection conducted. Action items: - Discard expired test strips. - Maintain temperature logs twice daily (i.e., opening and closing). - Create a weekly sanitation schedule. There's no proof that the slushy machine is cleaned regularly. - Don't store raw meats above packaged cooked meats (sous vide packages). - Contact the area EHO to schedule a follow-up inspection. Comments: - Facility was not open during time of inspection. - Hand washing station equipped with hot/cold running water, liquid soap, and paper towels. - 2-compartment sink equipped with hot/cold running water and 2 sink plugs. - Surface sanitizer achieved 200ppm chlorine residuals. Quats dispenser produced 200ppm quats residuals. - Test strips were available and unexpired: chlorine (April 2028); Quats (December 2027). - Butter-sugar tart on the top shelf of dessert cooler: 4.1°C internal temperature. - Ventilation hood was last deep cleaned: May 2026. Annual cleanings are in place. - High temperature dishwasher achieved 78.8°C after final rinse. - All cooler units registered below 4°C. * Front-end undercounter cooler was replaced: pesto (3.6°C); mango (3.5°C). - Back-end upright freezer: -23.6°C. Front-end chest freezer: -17.4°C. - Hot holding units achieved 79°C. - Temperature logs are maintained 1x daily. * Moving forward, record the temperatures twice daily. IR gun thermometer available for verifying units. - Permit to operate was available. * Post in a visible location where the public can see.
